DOM RAFAEL WHITE 2022 – TECHNICAL INFORMATION
VINIFICATION
Arinto and Antão Vaz grapes are handpicked and cold fermented in stainless steel tanks at a temperature of 15ºC for 2-4 weeks. After its initial filtration, the wine is left on its fine lees for 5-6 months before bottling, ensuring a generous mouthfeel. The cold fermentation temperatures largely contribute to the fresh tropical ‘secondary’ aromas while still young. The Arinto grape adds citrus freshness and minerality, while the Antão Vaz is known for its volume, texture, fruit, and character. The result is a firm, delicate wine with an elegant fragrance.
VITICULTURE
The Arinto and Antão Vaz varieties and vineyard plots are harvested separately, though they tend to ripen at a similar time. Sourced mainly from two sites: The Barragem Vineyard with its 25-year-old vines sits on skeletal, clay soils; and the Zé Rovisco Vineyard with younger vines on well-drained alluvial soils. The Barragem vineyard is the larger of the two sites and is located on the banks of the estate’s dam, contributing to freshness, complexity, and concentration, uncommon to wines from this region.
Responsible husbandry and care in the vineyard is critical to harvesting the best Mouchão fruit and sustaining our healthy bee population.
TASTING NOTES
Exquisitely fresh, yet full in the mouth. Clean, citrus with lively, complex, green aromas. Sourced from relatively old vineyards, this distinctive white is uncharacteristically concentrated yet elegant, with vibrant ripe fruit though delicate and crisp on the palate.
SERVING SUGGESTIONS
Serve at 10ºc on its own, or accompanied with seafood, fish and white meat dishes. Also, a great companion for appetizers such as olives, cheeses, chouriço and other charcuteries.
