PRODUCTION
The bees at Mouchão craft their honey from the wild shrubs, flowers, and native trees of the estate. This extensive flora includes lavender, eucalyptus, rockrose, rosemary, orange trees, gorse, broom, and heather, as well as an abundance of wildflowers such as poppies and chamomile. Human intervention is limited and occurs almost exclusively during harvesting. Mouchão honey is full of personality and reflects the natural conditions in which the bees work. Over time, the honey tends to thicken due to being a raw, natural product and it’s colour can vary from paler hues to deep golden-brown tones.
PROVENANCE
This honey is produced exclusively on the Mouchão estate. We take great pride in the responsible husbandry of our olive groves and vines – a critical role in sustaining our healthy bee population. With the certified organic management of our sheep and the FSC® quality seal on our forests, this ‘raw honey’ perfectly captures the essence of Mouchão’s natural environment.
TASTING NOTE
Usually with a thick but smooth texture, it has floral highlights of orange blossom, wild lavender, and jasmine, with undertones of biscuit, butter, and dried fruits. As this is a raw honey, over the months it tends to thicken and can vary both in consistency and in darker golden hues.
