BRANDY BAGACEIRA ALICANTE BOUSCHET 2017– TECHNICAL INFORMATION
DISTILLATION
Bagaceira, or grape pomace brandy, has been produced at Mouchão for over 100 years. In 1929 the ‘latest’ wood-fired copper still was installed in the winery, and it continues to be used today.
The low yielding manual, wooden presses, are essential for obtaining the best quality pomace, as the skins and pips remain undamaged. Only the best and freshest Alicante Bouschet pomace is selected for distillation.
Water vapour from the wood-fired boiler is forced through the cake in the copper still, absorbing the alcohol residue in its path before it is condensed and collected in a barrel. The heads and tails are carefully separated, to achieve the purest high-quality Alicante Bouschet spirit, maintaining the perfumed aromas, and eliminating unwanted ones.
This clear brandy is purposefully not aged in wood, to preserve and accentuate its fresh varietal tones, as well as its silky-smooth texture.
TASTING NOTES
Gardenia, fresh Alicante Bouschet raisins, jasmin, sandalwood, myrrh, lapsang souchong and rose petals are just some of the warm and complex aromas to emerge from this young, traditionally made and silky textured Bagaceira.
SERVING SUGGESTION
Serve chilled. Best sipped after meals, on its own or as the traditional accompaniment to Portugal’s famous bica coffee.
